I am currently working on a small, limited run, of 100mm, very special, kitchen/paring knives.
The concept behind the project is to make them traditional, but good, simple builds of steel, wood and brass, as they would have been many years ago, but make them to 2025 standard.
To enable this the steel is of course Sheffield-made SF100, HTd Rc58/59, enabling easier sharpening, making them more kitchen user friendly.
Scales of Bubinga, this has been used extensively over the years in Sheffield, is a good, traditional and hard wearing in the kitchen hardwood.
Secure those with brass fixings, traditionally those fixings would have been cutlers rivets, they are a very blunt edge tool though so the rivets will be swapped out for brass Corby bolts, adhesive would never have been used either, it will in this instance though.
No liners for these, simple and traditional, steel, wood and brass, but put together well.
I will be making 20 knives in total and each knife will be priced at £180 (you will see around this website that prices for such generally start at around £250), that includes secure delivery to your door in the UK.
It is a WIP project, all 20 blanks are now heat treated and back with me in the workshop, from here I will be calling off smaller quantities to grind and finish.

If you know anything about my work, you will know that quite a few of my projects utilise the Sheffield-made grade of SF100. The steel was commissioned by me in 2013, that year being the centenary of the discovery of stainless steel. It was made in August of that year, exactly 100 years to the month after Brearley discovered stainless steel here in Sheffield. It is steel with a story, steel with proper provenance.
I use it in various thicknesses, predominantly 3mm stock but occasionally 5mm and sometimes as much as 8mm. As you can imagine, the 8mm doesn't cut that easily; you don't just take a hacksaw to it.
To cut the 8mm, and sometimes the thinner gauges too, I call upon a mate of mine, and a fellow Sheffielder. He has a laser, a big one.
The slight niggle here is that I don't get the opportunity to utilise the laser too often. You do need to cut a fair quantity of blanks to make them cost-effective. As a result, for most of what I make the blanks are cut by hand, but when I do use the laser, once the blanks are cut for any project, I always take back the 'scrap', the skeleton of steel.
For years, I have been building a small collection of these things in the workshop, in varying sizes and with varying blanks cut from within the sheets. They are extremely cool and the interest they create among visitors to the workshop is quite phenomenal. Literally everyone commenting that I should do something with them, offer them for sale, so here they are.
I do have quite a few in a selection of sizes and, as mentioned, thicknesses. Most are 3mm thick and most are quite large, a good 2200 x 340mm.
They are very impressive things and I can imagine them in many uses, stand alone displays, garden artwork and sculptures, perfect for the coolest security grilles you will ever see, I have one hung on the wall at home.
Your best bet if you are fancy one of these is to drop me a line, and we can fix you an appointment to call the workshop. From there you can have a look through them and we can discuss the price. I imagine the prices will start at £50 or so, up to maybe £250, collected.
Even if not for yourself, these really are an ideal present for the person who has everything, they don't have one of these.
I have decided to produce a small limited edition run of my Portland90 knives all handled in #0048BA G10.
#0048BA, or 'Absolute Zero', is the rarest colour in nature.
Blade steel will be the definitive Portland Series grade of SF100 at 3mm stock.
24 total knives will be made with no option of reserving a specific number.
Hand made, superb quality leather sheath in a rich, deep brown 'tobacco' colour, slender in design and deep-fitting, fully welted, beautifully burnished edges and featuring complementary blue stitching.
These are now all sold.
The first two batches of Ultralites for this year are now all sold, so I am currently working on batch three for 2025. Again, I am making limited numbers of the 90 and 120 as well as the 110BT adaptation, the BT there denoting Bird & Trout.
Alongside these, I have the capacity to include a few 140F, the Filleter variant as well as the 150.
The numbers above indicate blade length.
All are cut from 3mm stock, Sheffield-made, SF100 steel and heat-treated to Rc60/61.
In the classic stonewashed finish, with a Kydex sheath complete with IWB clip (sheath example shown below), the all-in asking price is £135 each across the board, which I think offers tremendous value for money for an outfit of this calibre delivered.
